DIY Protein Bar Recipes!

Quest Style S’mores Protein Bars
Another week, another awesome protein bar recipe! With campfire season fast approaching, we felt that it was rather appropriate to share a S’mores version of our VitaFiber bars with all of you today! Quest Style S’mores Protein Bars – Santino, Team Ambrosia
Ingredients (makes 12 high fiber protein bars)
• 1.5 cups of VitaFiber Syrup
• 5 Kinnikinnick Gluten Free S’moreables Graham Style Crackers (ground in a blender)
• 2 cups of Precision Unflavoured or Chocolate Whey Isolate Protein Powder (bars are like fudge) *** 3 cups to make a firm bar
• 1 cup of Lily’s Sugar Free Dark Chocolate Chips (made with stevia)
• 2 cups of Dandies Mini Marshmallows

 

Directions
Today, I’m going to show you two different styles of bars; one will incorporate all ingredients into a “single mixture”, and the other will be a “stacked bar” filled with chocolate chips and marshmallows.
First up, I’m going to show you how to create the the single mixture bar.
1. Start by pouring 1.5 cups of VitaFiber into a pot.

2. Heat on medium for about 5 minutes, or until the syrup starts to bubble.

3. Turn the stove off, remove from heat and add all of your remaining ingredients into the pot; either mix this by hand or use a mixer. I usually don’t suggest doing this step by hand, as the mixture becomes very gooey and is almost impossible to mix once it starts cooling off.
4. After about 1 minute of mixing (using a mixer), the mixture will look similar to chocolate cake batter. This is how you’ll know it’s done.

5. Next, pour your mixture onto either a large piece of parchment paper, non-stick silicone mat or a lightly greased baking sheet. Take another sheet of parchment and lay it on top; knead this together. Once it’s all together start to flatten it out into a big sheet:

6. You can use a roller to flatten it, however make sure you have your sheet on top, otherwise it will stick to your rolling pin!
7. Once you finish flattening/rolling, and you have a nice, flat shape, place in the refrigerator for 1 hour to set.
8. Remove from the refrigerator and cut into bars; I use a pizza cutter.
9. I recommend storing each bar with parchment paper or any other means of storing them/wrapping them individually. If you don’t, and you stack them, they will stick together.

Stacked Bar
To create the stacked bar, don’t add the chocolate chips or marshmallows into the pot (set them aside to use once you’ve flattened the mixture). Once you have your flattened mixture, place the chocolate chips and marshmallows on one side, you are going to flip the opposite side over, and you will push down (enabling the mixture to melt the chocolate chips and marshmallows slightly). Pinch the edges; it should look like a calzone/panzerotti.

Set aside and let it cool. **** Alternatively, you can place it in the refrigerator for 1 hour to speed up the process. Once cool, cut into bars.

*** Quick Note: Make sure to store these individually, because these bars are like fudge and will stick together. Add 1 additional cup of protein powder to this recipe to make a firm bar.

Quest Style Chocolate Peanut Butter Protein Bars

Quest Style Chocolate Peanut Butter Protein Bars
Recipe (makes 12 high fiber protein bars)
Ingredients:
• 1.5 cups of Vitafiber Syrup
• 3 cups of any protein powder (I used 1.5 cups of vanilla and 1.5 cups of chocolate whey protein powder)
• 10-12 tablespoons of Organic Peanut Butter (you can use any nut butter!)

Instructions:
1. Start by pouring the 1.5 cups of VitaFiber into a pot.

2. Heat for about 2 minutes or until the syrup starts to bubble.

3. Turn stove off, remove from heat and dump all your remaining ingredients into the pot and either mix this by hand or use a mixer. Mixer is much easier as the recipe really starts to stiffen up. Once all incorporated pour the mixture into a lightly greased pan, spread it out and refrigerate for 1 hour. Remove from refrigerator and cut into bars. Enjoy

Quest Style Cookies and Cream Protein Bars
In case you simply couldn’t get enough of last week’s Quest Style Peanut Butter Protein Bars, we’re back at it again this week with a whole new recipe featuring VitaFiber’s syrup: Cookies and Cream Protein Bars… they’re “Cookie Monster” approved, we promise!

Ingredients (makes 12 high fiber protein bars)
• 1.5 cups of Vitafiber Syrup
• 8 tablespoons of Almond Flour/Meal
• 3 cups of Diesel Cookies & Cream Protein Powder ***NOTE: If you want a softer bar, reduce your protein powder by ¼ to ½ a cup or the almond flour by 4 tablespoons. This will create a less crumbly, more softer mixture to knead.
• 5 Glutino Chocolate Vanilla Crème Cookies Chopped

Directions
1. Start by pouring 1.5 cups of VitaFiber into a pot, keep the heat on medium for about 5 minutes or until the syrup starts to bubble.

2. Turn stove off, remove from heat and combine all of your remaining ingredients (almond flour, cookies and cream powder, chocolate vanilla crème cookies etc.) into this pot.

3. Mix either this using your hands or a mixer – a mixer will be much easier and more efficient as you want to ensure that all ingredients are mixed well.

4. After 1 minute of mixing, the mixture will begin to have a “crumbly” appearance, take this crumbly mixture and place it on a fairy large parchment paper, or a non-stick silicone mat. Combine.

5. Next is where all the magic happens! Start kneading this mixture to until you form a rectangular shape or one big slab. ***Be careful, as the mixture will be hot; you may want to use a cloth to protect your hands. Below, I’ve included pictures to show you how to knead the mixture in order to create the bars; you really want to squeeze it all together and flatten it.

6. Once you’ve finished kneading and you have achieved the rectangular shape, place in the refrigerator for 1 hour to set.

7. Remove from the refrigerator after 1 hour and cut into bars.
