Quinoa Stuffed Peppers

Ingredients

  • 4 organic red peppers (hollowed out & stems cut off)
  • 1 cup of Imagine Vegetable Broth
  • ¼ tsp salt
  • 2 tbsp olive oil
  • ¾ cup of Casbah Roasted Garlic & Olive Oil Couscous
  • ½ cup ofAmbrosia's Own Walnuts (crushed)
  • 1 package of Yves Veggie Ground Round
  • Organic vegetables of your choosing

Ingredients

  • 4 organic red peppers (hollowed out & stems cut off)
  • 1 cup of Imagine Vegetable Broth
  • ¼ tsp salt
  • 2 tbsp olive oil
  • ¾ cup of Casbah Roasted Garlic & Olive Oil Couscous
  • ½ cup ofAmbrosia's Own Walnuts (crushed)
  • 1 package of Yves Veggie Ground Round
  • Organic vegetables of your choosing

Directions

  1. Add Imagine Vegetable Broth, Salt & 1 tbsp Olive Oil to a pot & bring to a boil
  2. Add in Casbah Couscous; stir occasionally
  3. Remove from heat & let cool
  4. Meanwhile, add 1 tbsp of olive oil to a medium sauce pan
  5. Add any vegetables & sauté for about 5 minutes
  6. Mix in Yves Veggie Ground Round & couscous mixture
  7. Let simmer for about 2-3 minutes
  8. Remove from heat & stuff this mixture into the hallowed out red peppers
  9. Bake stuffed peppers at 400 for about 50 minutes!
  10. Serve!
