Peanut Butter Protein Banana Bread

Ingredients

  • 1 cup New Roots Lupine Seed Protein Powder
  • 2-3 ripe organic bananas; peeled and smashed
  • ½ cup unsalted vegan butter OR ¼ cup of melted coconut oil
  • 1 cup coconut sugar; packed
  • 1 tsp Ambrosia’s Own Vanilla Extract
  • 1 cup peanut butter
  • 2 cups all-purpose flour
  • 1 tbsp apple cider vinegar
  • ¾ tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 – 1.5 cups vegan chocolate chips

  • 2 cups all-purpose flour
  • 1 tbsp apple cider vinegar
  • ¾ tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 – 1.5 cups vegan chocolate chips

Directions

  1. Preheat oven to 350 degrees
  2. In a large mixing bowl, add butter and sugar together. Mix until smooth (about 2 minutes)
  3. Add in apple cider vinegar, vanilla extract, mashed banana and peanut butter. Whisk until well combined.
  4. Add in flour, New Roots Lupine Seed Protein Powder, baking powder, baking soda and salt. Mix until well combined.
  5. Fold in chocolate chips.
  6. Line a 9x5 loaf pan with compostable parchment paper. Pour the mixture into the loaf pan.
  7. Add to the oven, and bake for 55-65 minutes. Allow banana bread to cool for 30 minutes.
  8. Serve!
