Ingredients

  • ½ package of GoGo Quinoa Gluten Free Fusilli Pasta
  • ¼ cup organic peas
  • ¼ cup organic green beans
  • ½ cup organic grape tomatoes (halved)
  • 3 ½ tbsp extra virgin olive oil
  • Salt (to taste)

Directions

  1. Preheat oven to 400
  2. Add all of the vegetables to a roasting dish; drizzle with olive oil
  3. Roast in the oven for 4o minutes
  4. Meanwhile, bring large pot of salted water to a boil
  5. Add pasta to the salted water and cook until al dente
  6. Drain the pasta
  7. Add pasta to a serving dish, mix in vegetables & toss
  8. Season with salt & pepper. Drizzle with olive oil
  9. Serve!
