Coconut Oil Sweet Potato Fries & Garlic Lime Sauce

Ingredients

  • 5 organic sweet potatoes, peeled and cut into ¼ inch long slices
  • Nutiva, Coconut Oil (enough to coat)
  • ¼ cup of crushed & chopped organic garlic
  • Salt and pepper (to taste)
  • 2 tbsp unsweetened plain yogurt
  • 1 tbsp mayonnaise
  • 2 cloves of crushed organic garlic
  • 1 tsp of lime juice
  • Salt and pepper (to taste)

Ingredients

  • 5 organic sweet potatoes, peeled and cut into ¼ inch long slices

Directions

  1. Preheat oven to 450 degrees
  2. Line a pan with parchment paper
  3. Melt coconut oil
  4. In a large bowl toss sweet potatoes with just enough coconut oil to coat. Sprinkle with paprika and salt and pepper
  5. Spread sweet potatoes in on parchment paper
  6. Bake until sweet potatoes are tender and golden brown for about 20 minutes. Stir occasionally
  7. While the sweet potatoes are in the oven, mix garlic lime sauce ingredients well in a bowl, set aside!
  8. Remove from oven, add raw crushed garlic evenly
  9. Serve with garlic lime sauce
