Black Cherry Juice Rice Pudding

Ingredients

  • ¾ cup Lundberg Basmati Rice
  • ¼ tsp salt
  • 3 cup whole milk
  • 1 cup unsweetened coconut milk
  • ½ cup coconut sugar
  • ½ vanilla bean, split lengthwise
  • ½ cup R.W. Knudson Just Black Cherry Juice
  • 1 cup of organic cherries; pitted

Ingredients

  • ¾ cup Lundberg Basmati Rice
  • ¼ tsp salt
  • 3 cup whole milk
  • 1 cup unsweetened coconut milk
  • ½ cup coconut sugar
  • ½ vanilla bean, split lengthwise
  • ½ cup R.W. Knudson Just Black Cherry Juice
  • 1 cup of organic cherries; pitted

Directions

  1. Bring a pot of water to a boil
  2. Add in Basmati Rice
  3. Reduce heat to low, cover and simmer for about 20 minutes
  4. Remove Basmati Rice from heat
  5. Add in basmati Rice, Milk, Unsweetened Coconut Milk and coconut sugar, and salt into a clean saucepan
  6. Cook on medium heat until thick and creamy (about 15 mins)
  7. Set aside
  8. In a small saucepan, bring black cherry juice to a boil
  9. Add in pitted cherries, let simmer for 5 mins
  10. Set aside
  11. Pour cherry juice over rice pudding
  12. Serve!
