Over the past few years, it seems as though everyone has been going “coconuts” for well, coconuts!! From flour to milk to oil… there are a number of various ways to squeeze in your coconut fix!! But today we’re talking about arguably the most readily available form of coconuts; coconut water!  PS. It also helps that Vita Coco Coconut Water happens to be on sale this month!!!

Going “Coco” For Coconut Water!!!Brit, Team Ambrosia

 

Coconut water is a naturally amazing thirst-quencher, which comes in handy during those particularly hot & humid summer days that we’ve been having!! Not to mention, this Super Food is packed with all sorts of healthy goodness!! So we decided to share three different unique, yet tasty, recipes with all of you today!! Enjoy!

 

  1. Coconut Water Salad Dressing

 

Coconut Water Salad Dressing

 

Sounds like the perfect light & tangy summer salad dressing right?! Below is an easy way to fit in a little coconut during the day!!

 

Ingredients:

 

  • ½ Cup of coconut water
  • 2 tbsp of lemon or lime juice
  • 2 tbsp of olive oil
  • a pinch of sea salt

 

Directions:

 

  • Whisk the above ingredients together and pour over a summer salad!

 

  1. Coconut Water Sports Drink

Gatorade has a long-withstanding history of being the “King” of all sports drinks so to speak. But did you know that your standard bottle of Gatorade actually contains close to 56g of sugar?! YIKES… that is a lot of sugar!!

 

While Gatorade does provide a generous dose of electrolytes, considering the above sugar consumption, it may not be the “healthiest” of choices when it comes to sports beverages. The solution to this “Sports Drink Conundrum”? Make your own!!!

 

Coconut water is jam-packed with naturally occurring electrolytes! For example, coconut water contains more potassium than a banana! Who knew?!

 

Below is a delicious and nutritious way to replenish your body’s electrolytes during those hot, summer sweat sessions!

 

Lemon & Lime Coconut Water Sports Drink *** I am going to make this on Monday and will include a picture here

 

Ingredients (Makes One Serving):

 

  • 5 Cup of Coconut Water
  • 5 Cup of Fresh Water
  • ¼ Cup of Lemon Juice
  • ¾ Cup of Lime Juice
  • 2 Tablespoons of Honey
  • A Pinch of sea salt

 

Directions

 

  • Place all ingredients into a blender and blend together!
  • Pour drink into a ready-to-go water bottle, add ice and drink!!

 

 

  1. Fresh Watermelon Slushy

 

I’m envisioning drinking one of these poolside on a hot, summer day!!! They’re SO tasty and refreshing, I highly recommend trying this one out! Not to mention, this beach-appropriate drink is soooo easy to make!

 

Watermelon Slushy - July 11, July 4

 

Ingredients (serves two):

 

  • 2 Cups of watermelon
  • 1 Cup of ice
  • 1/2 Cup of fresh coconut water

 

Directions: 

 

  • Add ingredients into a blender and blend on medium/low for about 30 seconds
  • Pour into your favourite glasses, top with something fresh (kiwi or mint work well), and Enjoy!!
