Long Weekend Breakfast Ideas

Breakfasts are the King of Long Weekend meals. So to give them the attention that they deserve, we wanted to show you guys three different breakfasts that are “Long Weekend” worthy!

Three “Long Weekend Worthy” Breakfasts!

Long weekend breakfasts are somewhat sacred; there’s often ample time to sleep in, relax, and prepare a big, extravagant spread to share with your family and friends. To be honest, it’s actually one of my favourite parts of the long weekend!!

There are definitely some tried and true Long Weekend classics (eggs & bacon anyone?), but today we’re giving three of them a bit of a healthy twist!

Breakfast 1: Eggs & Turkey Bacon With a Side of Fruit

 Breakfast or brunch with cup of fresh coffee, ham and eggs, Greek yogurt, cereals, croissants and colorful fruits served on red-white tablecloth

 Ingredients:

  • Organic and Free-Run Eggs
  • Maclean – Turkey Bacon
  • Fruit of your choice

Directions:

  • This one is pretty simple! Fry up the eggs and turkey bacon, and create a lovely fruit salad on the side!

 Breakfast 2: Buckwheat Protein Pancakes

Ingredients:

  • 1 cup of oats
  • ½ cup cottage cheese
  • 2 eggs
  • Dash of nutmeg
  • Dash of cinnamon

Directions:

  • Combine all ingredients and mix in a blender, if they are too dry add more cottage cheese.
  • Place on a griddle pan with melted coconut butter or ghee (clarified butter) and make like regular pancakes.
  • Wait until top bubbles and flip.

Syrup Ingredients:

  • 1/2 blueberries
  • 1/2 pure maple syrup
  • Juice of ½ a lemon

Directions:

 Place on the stovetop and gently warm.

 Breakfast 3: Overnight Oats

  Ingredients:

  • 2 cups of oats
  • 1 cup of milk (can also use coconut or almond milk)
  • Half a cup of raisins
  • 1 cup of yogurt
  • 1 grated apple
  • 1 tsp of honey (optional)

Directions:

  • Mix the cooked oats, milk and half a cup of raisins into a bowl and place in fridge overnight
  • Add one cup of yogurt to the mixture the next day
  • Add 1 grated apple to the mixture
  • 1 tsp of honey (if desired)
