  1. Chickpeas – Like avocados, chickpeas are easily adaptable and can be added to a variety of recipes! Below is one of my favourite salad recipes, which combines both of these nutrition-packed ingredients:

  • Combine quinoa, cucumbers, tomatoes, onion, avocado and chickpeas. You’ll thank me for this one, I promise! This salad is perfect to make for dinner the night before and bring into work as a nutritious, leftover lunch!

  1. Broccoli – Broccoli soup is one of my favourite dishes! It’s incredibly easy, tasty and nutritious! Not to mention, the colours are so bright and vibrant. Gordon Ramsey has a very simple broccoli soup recipe that is absolutely perfect for those busy days when you’re just too busy to plan supper. Check it out here!
