Latkes are definitely a staple during Hanukah… and for good reason – they’re incredibly delicious! But did you know that this festive signature dish can culminate to a pretty heft fat and calorie amount… So today we’re going to share a sweet potato latke healthier alternative!
Sweet Potato Latkes – Brit, Team Ambrosia
Okay… bare with me because this is completely unchartered territory!! Truth be told, I have never actually made potato latkes in my life, never mind a “healthy version” of one, so this was a somewhat intimidating task!! BUT… I can assure you that I have definitely consumed a plethora of potato latkes in my day, and I kind of feel like that should at least count for something, no?
ANYWHO… here’s my version of “better for you” potato latkes, it was inspired from the vegan lifestyle blog “Love Wild Live Free”!! You may recognize the name, because Avra (the brains behind the blog), recently took over our social media accounts! You can find her original recipe HERE… but I swapped a few ingredients to make a sweet potato variety! To me, they’re absolutely delicious, but I am open to any and all suggestions that you may have… just don’t be too harsh on me; I am a newbie after all! 😀
Ingredients:
- 2 tbsp ground flax
- 6 tbsp water
- 6 sweet potatoes
- 4 tsp ground cinnamon
- 1/2tsp ground cloves
- sea salt (to taste)
- 1/4 cup of gluten free flour
- 1/4 cup of coconut oil
- 2 tsp of baking powder
Directions:
1. Preheat oven to 400F
2. Squeeze the shredded sweet potatoes to drain as much liquid as possible
3. In a large bowl, mix all of the ingredients well until everything is combined nicely
4. Scoop the sweet potato mixture and place it 1 inch apart onto cookie sheets. Be sure to flatten the mixture with a spoon or fork!
5. Bake for 15 to 20 minutes or until bottoms are golden and crisp. Flip, then bake the opposite side until the sides are golden brown.
