Homemade Almond Milk – 3 Ways!!

In case you hadn’t noticed, we’re OBSESSED with our followers and their insanely gorgeous food photography! We’re inspired every single day from their kitchen concoctions, and more recently we’ve been seeing a lot of them trying their hand at homemade almond milk! Well, seeing as how Organic European almonds are now on SALE for the month of July, we thought it was the appropriate time to hop right on that bandwagon and give it a try for ourselves!

Bringing Chocolate Milk Back… Chocolate Almond Milk That is! – Brit, Team Ambrosia

Chocolate and strawberry milk were my absolute FAVOURITE drinks as a kid!! Pizza lunches at school were the best, not for the actual pizza itself, but because they always came with those little amazing cartons of chocolate milk! Mind you, this is way back when milk was hailed all around for its nutritional benefits – as little, growing humans we all needed to build those strong bones and teeth right?! But now that we’re a little more aware of the inflammatory effects milk can have on our bodies, it may be time to look for healthier alternatives when we want to get our chocolate or strawberry milk fix!!! Insert: homemade flavoured almond milk alternatives!!!

Now although homemade almond milk may seem like it’s a little bit on the complicated side of things… I’m here to tell you that it’s not nearly as tedious as one might originally think!!! Not to mention – the end result is QUITE delicious! We’re going to go over three different flavours of homemade milk today – chocolate, strawberry and original unsweetened!!! Enjoy! Original Almond Milk

Ingredients

  • 1 cup of organic European almonds
  • 2 cups of water (this is not included in the water used to soak the almonds!)

Directions

  1. Soak the almonds in water overnight – or for up to 2 days! The longer they sit in water, the creamier your almond milk will be!
  2. Drain the almonds and rinse in cold water
  3. Place the almonds and two cups of water into a blender or food processor
  4. Blend on high until an opaque, white liquid is formed
  5. Drain and strain the almond milk – you can do this with a cheesecloth to help separate any leftover bits or meal!
  6. Continue this process until you are left solely with liquid
  7. If you’d like, you can now add a sweetener! Options to consider – honey, agave, maple syrup etc. Add to taste!!! This step is completely optional!!

Chocolate Almond Milk

Ingredients

  • 1 cup of organic European almonds
  • 2 cups of water (this is not included in the water used to soak the almonds!)
  • 1/5 cup of semi-sweet, vegan dark chocolate (chopped)

Directions

  1. Follow the above instructions for the original almond milk recipe
  2. Meanwhile, melt the chopped dark chocolate either on the stove top or in the microwave
  3. Once the almond milk is ready, and the dark chocolate has been melted, slowly add in the melted chocolate into the almond milk until you reach a desired taste! You do not have to add in all of the chocolate!!!
  4. Mix well
  5. Serve!

Strawberry Almond Milk

Ingredients

  • 1 cup of organic European almonds
  • 2 cups of water (this is not included in the water used to soak the almonds!)
  • 2 cups of strawberries (diced)
  • ½ cup sugar alternative
  • ½ teaspoon organic vanilla extract

Instructions

  1. Follow the above instructions for the original almond milk recipe
  2. Meanwhile, place strawberries, sugar alternative and vanilla extract in a saucepan over medium heat and mix for about 10 minutes (until strawberries begin to break down)
  3. Once you have a thick liquid consistency, add to the blender and blend on high until the ingredients have mixed well. Strain the mixture to get rid of seeds!
  4. Place in fridge so that the mixture cools completely.
  5. Mix this strawberry liquid in with the almond milk
  6. Serve!
