Heading to a cottage this long weekend for Canada Day? Whether you’re going as a guest or hosting it’s always a little stressful planning and divvying out meals for the weekend. And by stressful we mean STRESSFUL! So we thought that we would lessen the burden by sharing three easy recipes that can be prepared ahead of time for a stress-free cottage experience… because who wants to spend their time cooking indoors at the cottage all day?!
Canada Day Make-Ahead Dishes
When I’m at the cottage I like to spend as little time as possible indoors so make-ahead meals are absolutely CRUCIAL in order to fully maximize your cottage experience! Cottages should be all about relaxing and enjoying the great outdoors NOT sweltering in a kitchen preparing breakfast for twenty guests. Below are three of my personal favourite make-ahead dishes to bring to a friend’s cottage or serve at my very own cottage! ENJOY!
Potato Salad
Here’s What You’ll Need
- 8 Potatoes
- 1 ½ cups Nutrimax Dairy Free Mayonnaise ** on SALE this month!!!!
- Organic Celery; chopped
- Organic Onion; chopped
- Paprika
- 1 Tbsp Life Source Organic Yellow Mustard
- Salt and pepper, to taste
What to Do
- Peel potatoes, dice them and place them into boiling, salted water. Boil until cooked. Drain water , add potatoes to a large bowl and cool to room temperature
- In a separate bowl mix mayonnaise, sugar, mustard, salt, garlic powder, and cpaprika
- Add this mixture to the bowl with potatoes
- Add in the chopped celery and onion as well
- Serve!
Breakfast Casserole
Here’s What You’ll Need
- 6 Organic Eggs
- 1 Package of Natural Bacon
- 8 Frozen Nature’s Path Waffles; cubed
- ¼ cup of Organic Maple Syrup
- 1-1/4 cups milk
- 1 cup Shredded Cheese
- Salt and pepper, to taste
What to Do
- Fry bacon until cooked, set aside to cool. Once cooled, chop up the back into smaller pieces.
- Add half of the cubed waffles to a greased 8-inch baking dish creating a layer. Top this with half of your cooked bacon pieces and ½ cup of cheese. Repeat this step with the remaining ingredients.
- In a separate bowl, whisk together the eggs, maple syrup, milk and salt and pepper until combined. Pour this mixture evenly over the casserole.
- Wrap the baking dish with plastic wrap and place in the refrigerator for up to one full day.
- Remove, preheat oven to 325 and bake for 45 to 50 minutes.
Avocado and Mango Salsa
Here’s What You’ll Need
- Two Organic Avocados; cubed
- Two Organic Mango; cubed
- Olive Oil & Balsamic Vinegar, to taste
- One Organic Red Onion; chopped
- Salt & pepper, to taste
What to Do
- In one bowl, mix together the avocados, mangoes and onions
- In a separate bowl, mix olive oil, balsamic vinegar and salt and pepper
- Drizzle the mixture over the salad
- Serve!
