Sweet Potato Walnut Bread

Ingredients

  • 1¼ cups organic sweet potato, mashed
  • 2 cups Ambrosia’s Own all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground allspice
  • ½ tsp baking soda
  • ½ tsp sea salt
  • ¼ tsp ground nutmeg
  • 1 cup unrefined sugar
  • ½ cup organic canola oil
  • 2 free-range eggs
  • ½ cup organic milk
  • 1 tsp vanilla extract
  • ½ cup Mike & Mike’s Organic Walnuts, chopped

Directions

  1. Preheat oven to 350°F (180°C).
  2. Grease a 9 x 5-inch loaf pan.
  3. Whisk the flour with baking powder, cinnamon, allspice, baking soda, salt and nutmeg; set aside.
  4. In a separate bowl, beat the sugar, oil and eggs until well combined.
  5. Beat in mashed sweet potato, milk and vanilla until smooth.
  6. Stir in flour mixture until incorporated.
  7. Fold in walnuts.
  8. Scrape into the prepared pan and smooth top.
  9. Bake for 65 to 75 minutes or until cake tester inserted in centre comes out clean.
  10. Cool in pan on rack for 20 minutes.
  11. Cool completely on wire rack.
