Gluten Free Vanilla Almond Moon Cookies

Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 teaspoon Ambrosia’s Own vanilla extract
  • 2 teaspoonsAmbrosia’s Own almond extract
  • 2 1⁄3 cups Ambrosia’s Own Brown Rice Flour
  • 1 cup NOW Natural Almond Flour
  • 1 cup powdered sugar

Ingredients

  • 1 cup unsalted butter, room temperature

  • 2 teaspoonsAmbrosia’s Own almond extract
  • 2 1⁄3 cups Ambrosia’s Own Brown Rice Flour
  • 1 cup NOW Natural Almond Flour
  • 1 cup powdered sugar

Directions

  1. Preheat oven to 350 degrees F.
  2. Spray several cookie sheets with cooking spray.
  3. With a mixer, beat the butter with sugar until light and fluffy.
  4. Add vanilla extract and almond extract, beat until incorporated.
  5. Stir in the flour and almonds. Work flour mixture into a firm dough.
  6. Working with 1 tablespoon of dough at a time, shape a long in the middle is thicker than both ends. Bend dough log into a crescent shape.
  7. Place on greased cookie sheets and repeat until all dough is used.
  8. Bake 12-15 minutes or until light brown.
  9. Sift powdered sugar into a small shallow bowl.
  10. While the cookies are still warm , roll the crescents in the powdered sugar.
  11. Cool on racks.
